Cashew nuts – 15 to 20
Dates – 10-12 pieces deseeded
Banana – 1
Milkmaid – 1 tin
Milk – As per requirement
Sugar – As per requirement
Cashew, Kismis & cardamom for garnishing
Preparation
1. Keep cashew nuts soaked in milk till it softens. Once done make a smooth paste of cashew nuts with milk in mixer grinder.
2. Keep deseeded dates soaked in milk till it softens. Once done make a smooth paste of dates with milk in mixer grinder
3. Steam banana and mash it into a paste. Saute mashed banana in a little ghee and make a smooth paste by adding a little milk in a mixer grinder.
4. In a Kadai add a little ghee and sauté banana paste. Add Cashew nuts paste and dates paste on to it and mix well.
5. Mix milkmaid in 2 tins of warm water. Once the mixture in step 4 gets cooked, add the milk maid mix onto it and boil till it thickens. Add more milk maid or milk to adjust consistency.
6. Adjust sweetness by adding sugar if required.
7. Fry the ingredients for garnishing in a little amount of ghee and add on to top of Payasam.
8. Transfer to a serving Bowl and decorate with dates and cashews.
9. Serve Hot/Chilled.
