Ingredients:
Chopped tender coconut flesh - 1 cup
Fresh paneer block 100 gms/Grated paneer - 3/4 cup
Milk – 3 cups
Sugar – 56 tbsp
Rice powder or Corn Flour - 2 tblsp ( dissolve in 2 tbsp of water)
Cardamom powder - 2 pinches (Crushed)
Saffron - few strands
Water - 1 cup
Dry fruits and nuts - for garnishing
Chopped nuts - a fistful
Rose essence - few drops (optional)
Condensed Milk - 3 tbsp (Optional)
Method:
Wash and grate the paneer using a small holed grater and set aside.
Boil the milk in a pan and when it comes to boil, add sugar, Tender coconut, Saffron Strands and corn flour water or Rice powder. Allow it to boil for 5 minutes.
In the mean time, chop the nuts and keep it ready. Add the cardamom powder and condensed milk.
Lastly add the grated paneer and give a boil for 2 minutes. Now the Kheer will become thick. Switch off the stove and add few drops of rose essence. Enjoy by sprinkling the chopped nuts Dry fruits and few saffron threads!
