FIVE STARS WONDER

INGREDIENTS
  1. One cup besan or gram flour or kadalai maavu
  2. One cup Maggi coconut powder
  3. One cup milk
  4. One cup ghee
  5. One cup sugar
  6. cardamom powder or elaichi
Method of Preparation * Grease a tray and set aside.
* Add 1 cup besan to a heavy bottom pan or kadai.
* On a low to medium flame fry until it turns aromatic.
* Then add 1cup Maggi coconut powder. 
* Fry for about 2 to 3 minutes on a low flame.
* Keep stirring continuously to prevent burning. 
* Next add 1 cup sugar.
* Pour 1 cup  milk and ghee. Stir well.
* Cook on a medium heat until it begins to bubble well.
* Add cardamom/ elaichi powder.
* Continue cooking until the mixture begins to thicken.
* Pour 4 tbsps (¼ cup) of ghee. Hot ghee yields a 5star with lot of pores. For a soft set 5 star just add ghee
* Stir well and cook.
* Be attentive as it reaches the final stage. The mixture thickens and leaves the sides of the pan and it turns porous (visible bubbles).
* Pour this to the greased tray immediately. Level it with a greased cup or spatula.
* Using a greased knife, draw lines on the 5 stars when still hot.
* After a while, cut deeply. When cooled down, cut into piece and serve

JEERA INSTANT DOSE

Ingredients
  1. rice flour 1 cup
  2. fine rava 1/2 cup
  3. Maggi coconut powder 1/2 cup
  4. Onion finely chopped 1 cup
  5. Jeera 1 tsp
  6. Coriander chopped 1/2 cup
  7. Green chillies 4no chopped
  8. salt to taste
  9. water as needed for the mixing batter for seasoning
  10. oil 4 tsp
Method of Preparation Mix rice flour, fine rava, Maggi coconut powder, onion , green chilies, coriander, jeerakam ,salt and water in a bowl. The batter should be watery consistency. Heat a dosa tava/pan for 2-3 mins. Take a ladle of dosa batter and pour it on the hot dosa tava/pan. Note: the batter due to its thin consistency will spread nicely. Add 1/2 tsp oil, let cook till light brown color and crisp. Flip the dosa add another 1/2 tsp and cook for a min. Ready to serve with chutney or pickle

GREEN RICE

Ingredients for green rice
  1. one and a half cups rice uncooked
  2. One cut or pudina
  3. Handful coriander leaves (optional)
  4. Four green chilies
  5. One inch chopped ginger or paste
  6. Three small pods garlic
  7. Half cup Maggi coconut powder
  8. Salt as needed
  9. Two tablespoon Oil or ghee as needed
  10. Two and a half cups water (adjust to suit your rice variety)
  11. One to two tablespoon lemon juice (optional)
  12. 1½ cups mix veggies (optional)
Spices for green rice
  1. One bay leaf or tej patta
  2. Four cloves or laung
  3. Two inch cinnamon or dalchini
  4. Two green cardamoms or elaichi
Method of Preparation * Heat a pan with 2 tablespoons oil or ghee. 
* Add spices, green chillies, pudina and coriander
* Saute till they begin to sizzle.
* Add the Maggi coconut powder paste and fry on a medium to low flame for about 2 to 3 minutes. 
* Optional – If using mix veggies you can add 1½ cups of mixed vegetables now & then saute for another 2 mins.
* Pour water and add salt. Mix and check the salt. Bring it to a boil.
* Add washed and drained rice. Cook until done in preferred way in cooker or open pan
* Serve pudina rice with a simple onion raita or a potato kurma
